Ingredients

- 1 can (14 oz) artichokes
- 2 cups (60g) arugula or baby spinach
- 1/2 cup cherry tomatoes, halved
- 1/4 cup (30g) red onion, finely sliced
- 1/4 cup (30g) Kalamata olives, sliced
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Drain and rinse the artichokes, then place them on a baking sheet and roast for 15-20 minutes until golden.
- In a large bowl, combine arugula or spinach, cherry tomatoes, red onion, Kalamata olives, and roasted artichokes.
- If using, add crumbled feta cheese.
- Toss gently and serve immediately.
Notes
For extra flavor, add a squeeze of lemon juice or a drizzle of balsamic vinegar before serving. Mix in some cooked white beans or chickpeas for added protein and texture.
