Description

A light and flavorful salad combining roasted artichokes, fresh greens, and tangy olives, perfect for any meal.


Ingredients

  • 1 can (14 oz) artichokes
  • 2 cups (60g) arugula or baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup (30g) red onion, finely sliced
  • 1/4 cup (30g) Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Drain and rinse the artichokes, then place them on a baking sheet and roast for 15-20 minutes until golden.
  3. In a large bowl, combine arugula or spinach, cherry tomatoes, red onion, Kalamata olives, and roasted artichokes.
  4. If using, add crumbled feta cheese.
  5. Toss gently and serve immediately.

Notes

For extra flavor, add a squeeze of lemon juice or a drizzle of balsamic vinegar before serving. Mix in some cooked white beans or chickpeas for added protein and texture.
