- 4 medium sweet potatoes
- 2 cups cooked turkey, shredded
- 1 cup cranberry sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet. Bake for about 45-60 minutes or until tender.
- In a bowl, mix the shredded turkey, cranberry sauce, mozzarella cheese, and green onions.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them open and fluff the insides with a fork.
- Stuff each sweet potato with the turkey and cranberry mixture.
- Return them to the oven for 10-15 minutes until heated through and the cheese is melted.
- Serve warm.
Notes
You can store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C).
