Description

A colorful and delicious dish that combines the savory flavor of turkey with the sweetness of cranberries and sweet potatoes, perfect for any meal.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked turkey, shredded
  • 1 cup cranberry sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet. Bake for about 45-60 minutes or until tender.
  3. In a bowl, mix the shredded turkey, cranberry sauce, mozzarella cheese, and green onions.
  4. Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them open and fluff the insides with a fork.
  5. Stuff each sweet potato with the turkey and cranberry mixture.
  6. Return them to the oven for 10-15 minutes until heated through and the cheese is melted.
  7. Serve warm.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C).
