Ingredients

- 1 bone-in leg of lamb (4–5 lbs)
- 4 cloves garlic, sliced
- 2 tbsp fresh rosemary (or 1 tbsp dried)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup beef or lamb broth
- 2 tbsp flour (for gravy)
Instructions
- Preheat the oven to 350°F (175°C).
- Rub the leg of lamb with olive oil, garlic, rosemary, salt, and pepper.
- Place the lamb in a roasting pan.
- Roast in the oven for about 90 to 120 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Remove the lamb from the oven and let it rest.
- For the gravy, in a saucepan, combine the broth and flour over medium heat, whisking until thickened.
- Slice the lamb and serve with the gravy.
Notes
Allow the lamb to rest for about 15 minutes after roasting to keep the meat moist.
