Ingredients

  • 1 bone-in leg of lamb (45 lbs)
  • 4 cloves garlic, sliced
  • 2 tbsp fresh rosemary (or 1 tbsp dried)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup beef or lamb broth
  • 2 tbsp flour (for gravy)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rub the leg of lamb with olive oil, garlic, rosemary, salt, and pepper.
  3. Place the lamb in a roasting pan.
  4. Roast in the oven for about 90 to 120 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  5. Remove the lamb from the oven and let it rest.
  6. For the gravy, in a saucepan, combine the broth and flour over medium heat, whisking until thickened.
  7. Slice the lamb and serve with the gravy.

Notes

Allow the lamb to rest for about 15 minutes after roasting to keep the meat moist.
