- 2 large Eggs
- 1 cup Milk

- 2 tsp Vanilla Extract
- 1 cup Hot Water
- 1 cup Unsalted Butter, softened
- 4 cups Confectioner’s Sugar
- 1/2 cup Unsweetened Cocoa Powder
- 2 tbsp Heavy Cream (or as needed)
- 1 tsp Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch cake pans.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, mix the sugar, eggs, milk, oil, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture, alternating with hot water. Mix until just combined.
- Divide the batter evenly among the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in the pans for 10 minutes and then transfer to a wire rack to cool completely.
- In a mixing bowl, beat the softened butter until it’s light and fluffy.
- Gradually add the confectioner’s sugar, cocoa powder, cream, and vanilla extract. Beat until smooth and creamy, adjusting the consistency with more cream if needed.
- Place one cooled cake layer on a serving plate. Spread a generous layer of frosting over it. Repeat with the second layer and top with the third layer.
- Cover the entire cake with frosting and smooth it out using an offset spatula. For an extra touch, sprinkle crumbled chocolate cookies or crushed Oreos on top.
- Chill the cake for at least 30 minutes before slicing and serving.
Notes
For an extra rich flavor, use high-quality cocoa powder. Make sure your cake layers are completely cooled before frosting to prevent melting.
