Description

A fudgy chocolate cake topped with glossy ganache and fresh strawberries, perfect for any celebration.

Ingredients

  • Unsalted Butter (Room Temperature): 6 oz (1.5 sticks), plus more for greasing pan
  • Granulated Sugar: 10 oz (about 1 1/4 cups)
  • Large Eggs: 3 (about 6 oz total without shell)
  • All-Purpose Flour: 8 oz (about 1 2/3 cups), plus more for dusting pan
  • Unsweetened Cocoa Powder (Good Quality): 2 oz (about 3/4 cup)
  • Baking Powder: 3/4 oz (1.5 tablespoons)
  • Salt: 1/4 oz (1/2 teaspoon)
  • Milk (Whole or 2%): 6 oz (3/4 cup)
  • Vegetable Oil: 3 oz (3/8 cup)
  • Vanilla Extract: 3/4 oz (1.5 tablespoons)
  • Hot Water: 6 oz (3/4 cup)
  • Semi-Sweet Chocolate, finely chopped: 8 oz
  • Heavy Cream: 8 oz
  • Fresh Strawberries: 1 pint
  • Whipped Cream: as needed
  • Chocolate Shavings/Sprinkles: as needed

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch square cake pan.
  2. Cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
  3. Whisk together flour, cocoa powder, baking powder, and salt in a separate bowl.
  4. Gradually add dry ingredients to wet ingredients, alternating with milk, vegetable oil, and vanilla extract, starting and ending with dry ingredients. Mix until just combined.
  5. Stir in the hot water until the batter is smooth. Pour the batter into the prepared cake pan.
  6. Bake for 35-40 minutes, or until a cake tester comes out clean. Cool in the pan for 10 minutes, then invert onto a wire rack.
  7. For the ganache, heat the heavy cream until it simmers, then pour over chopped chocolate. Whisk until smooth and let cool slightly.
  8. Level the top of the cooled cake, pour ganache over it, and decorate with fresh strawberries, whipped cream, and chocolate shavings/sprinkles.

Notes

Store leftover cake at room temperature for up to 2 days or in the refrigerator for about a week. You can freeze it for up to 3 months.
