  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat the mixture until smooth. Stir in the boiling water.
  4. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow cakes to cool completely in the pans before transferring to a wire rack.
  6. In another bowl, beat together the softened butter, powdered sugar, and cocoa powder until creamy. Add the heavy cream and mix until smooth.
  7. Spread the frosting between the layers of cake and apply over the top and sides. Decorate as desired.
