A decadent chocolate cake layered with fluffy cream and topped with a rich chocolate ganache. Perfect for celebrations!

Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup (60g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 8 oz (225g) semi-sweet or dark chocolate, chopped
  • 1 cup (240ml) heavy cream
  • 2 tbsp unsalted butter (optional)
  • 2 cups (480ml) heavy cream
  • 1/2 cup (60g) powdered sugar
  • 1 tsp vanilla extract
  • Shaved chocolate or chocolate curls (for garnish)
  • Fresh berries or edible flowers (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch (23cm) round cake pans with parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Add the sugar and mix well.
  3. In another bowl, whisk together the eggs, milk, oil, and vanilla until smooth. Gradually add to the dry ingredients, mixing to combine. Slowly pour in boiling water and mix until smooth.
  4. Divide batter between prepared pans and bake for 30-35 minutes, until a toothpick comes out clean. Cool for 10 minutes, then transfer to a wire rack to cool completely.
  5. For the ganache, place chopped chocolate in a bowl. Heat cream in a saucepan until simmering. Pour it over the chocolate, let it sit, then stir until smooth. Add butter if desired. Cool to room temperature.
  6. For the whipped topping, beat cream, powdered sugar, and vanilla until soft peaks form.
  7. Assemble the cake by placing one layer on a plate, spreading whipped cream on top, adding the second layer, and frosting with remaining whipped cream.
  8. Drip cooled ganache around the edges and pour in the center, spreading it outward. Add garnishes as desired.
  9. Chill the cake for at least 1 hour before serving.

Notes

Make sure all your ingredients are at room temperature. Use high-quality chocolate for a richer ganache. You can also add coffee or orange zest for different flavors.
