- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups rolled oats
- 2 cups Rice Krispies
- 1–2 cups chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Add in the vanilla extract and eggs, one at a time, mixing well after each addition.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and baking soda.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Stir in the oats, Rice Krispies, and chocolate chips until evenly distributed.
- Scoop tablespoon-sized portions of dough and drop them onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown and centers are set.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for about a week or freeze for longer storage.
