- 1 cup diced rhubarb
- 1 cup diced ripe peaches, peeled
- 1/4 cup honey
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour

- 1/4 tsp salt
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 8 oz cream cheese, softened

- 1 1/2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a small saucepan over medium heat, cook the diced rhubarb, peaches, and honey for about 5–7 minutes until they are soft and jammy. Allow the mixture to cool.
- In a mixing bowl, cream the softened butter and granulated sugar together until it is light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the dry mixture to the butter mixture, alternating with the whole milk. Stir in the vanilla extract and the cooled rhubarb-peach mixture.
- Divide the batter among the cupcake liners and bake for 20–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely.
- For the frosting, beat the softened cream cheese and butter together until smooth. Add honey and vanilla extract, then gradually add powdered sugar until the mix is light and fluffy.
- Frost the cupcakes once they are fully cooled. Garnish with a small slice of peach or a sprinkle of finely diced rhubarb if desired.
Notes
For best results, use ripe peaches for sweetness. Let the rhubarb-peach mixture cool for ideal texture in the batter.
