A light and crispy salad featuring spiralized zucchini, yellow squash, and cherry tomatoes, drizzled with a zesty lemon dressing.


Ingredients

  • 1 medium zucchini, spiralized
  • 1 medium yellow squash, spiralized
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • Salt & black pepper, to taste
  • Lemon wedges, for garnish

Instructions

  1. Start by spiralizing the zucchini and yellow squash. Cut the cherry tomatoes in half.
  2. In a large bowl, combine the spiralized zucchini, yellow squash, halved tomatoes, chopped parsley, and chopped basil.
  3. Drizzle with olive oil, lemon juice, and lemon zest. Season with salt and pepper to taste.
  4. Gently toss the salad and garnish with a lemon wedge before serving.
