A delightful cheesecake featuring smooth cream cheese blended with vibrant pineapple and orange flavors, perfect for summer gatherings.
Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 cup pineapple puree
- 1 cup orange juice
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar, mixing well.
- Add eggs, one at a time, beating well after each addition. Mix in vanilla extract.
- Divide the batter in half. To one half, stir in the pineapple puree. To the other half, stir in the orange juice.
- Pour the pineapple batter over the crust, then spoon the orange batter on top. Use a knife to swirl the two batters together.
- Bake for 50-60 minutes, or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
For best results, ensure cream cheese is softened and consider adding orange zest for extra flavor. Store leftovers in the refrigerator for 3-4 days or freeze tightly wrapped for longer storage.
