Description

Ingredients

  • 2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup pineapple puree (fresh or canned)
  • 1/4 cup granulated sugar
  • 2 tsp unflavored gelatin
  • 1/4 cup cold water
  • 1 cup heavy whipping cream, chilled
  • Pineapple slices or chunks (for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. In a bowl, mix together the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of the pan and bake for 10 minutes. Let it cool.
  3. In a large bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing until just combined. Stir in the vanilla extract. Pour this mixture over the cooled crust and bake for 45-50 minutes. Let it cool completely and refrigerate for at least 4 hours.
  4. Sprinkle the gelatin over the cold water and let it bloom for 5 minutes. Heat the pineapple puree and sugar until dissolved. Stir in the bloomed gelatin and let it cool.
  5. In another bowl, whip the heavy cream to stiff peaks and gently fold it into the cooled pineapple mixture.
  6. Spread the pineapple mousse over the cheesecake layer. Refrigerate for at least 2 hours before serving.
  7. Top your cheesecake with pineapple slices and mint leaves for a beautiful finish.

Notes

Serve chilled for best taste. Store leftovers in an airtight container for up to 4 days.
