- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup pineapple puree
- 2 cups whipped cream
- 1 cup pineapple chunks (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, beating until well combined.
- Fold in the pineapple puree and whipped cream until the mixture is light and fluffy.
- Pour the cream cheese mixture over the crust in the springform pan, spreading evenly.
- Refrigerate for at least 240 minutes or until set.
- Before serving, top with pineapple chunks for garnish.
Notes
Use softened cream cheese for a smooth filling. Can be made a day in advance and stored in the fridge.
