Ingredients

  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup pineapple puree
  • 2 cups whipped cream
  • 1 cup pineapple chunks (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth.
  5. Gradually add powdered sugar and vanilla extract, beating until well mixed.
  6. Fold in the pineapple puree and whipped cream gently until light and fluffy.
  7. Pour the cream cheese mixture over the crust in the springform pan, spreading it evenly.
  8. Refrigerate for at least 4 hours or until fully set.
  9. Top the cheesecake with pineapple chunks before serving.
