- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup pineapple puree
- 2 cups whipped cream
- 1 cup pineapple chunks (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth.
- Gradually add powdered sugar and vanilla extract, beating until well mixed.
- Fold in the pineapple puree and whipped cream gently until light and fluffy.
- Pour the cream cheese mixture over the crust in the springform pan, spreading it evenly.
- Refrigerate for at least 4 hours or until fully set.
- Top the cheesecake with pineapple chunks before serving.
