Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup melted butter
  • 3 packs (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 3 large eggs
  • 1/2 cup heavy cream
  • 2 tablespoons gelatin
  • 1/4 cup cold water
  • 1/2 cup sweetened condensed milk
  • 1/4 cup fresh lime juice
  • 1/4 cup granulated sugar
  • Fresh blackberries
  • Mint leaves

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. For the crust, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press this mixture into the bottom of the prepared pan.
  3. For the filling, beat the cream cheese and 1 cup sugar until smooth. Add sour cream, lime juice, lime zest, and eggs, mixing until combined. Pour over the crust and bake for 60-70 minutes until set. Allow to cool to room temperature.
  4. To make the mousse, combine gelatin and cold water; heat gently until dissolved. Whip heavy cream until soft peaks form, then fold in condensed milk and dissolved gelatin. Spread mousse mixture over the cooled cheesecake.
  5. For the glaze, heat lime juice and sugar until sugar dissolves. Allow to cool slightly, then drizzle over the mousse.
  6. Refrigerate the cheesecake for at least 4 hours. Before serving, garnish with fresh blackberries and mint leaves.

Notes

Use freshly squeezed lime juice for the best flavor. Store leftovers in the refrigerator for up to 3 days, covered.
