A light and refreshing dessert that combines creamy cheesecake with a delightful lime mousse on top, perfect for warm days and special occasions.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup melted butter
- 3 packs (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 3 large eggs
- 1/2 cup heavy cream
- 2 tablespoons gelatin
- 1/4 cup cold water
- 1/2 cup sweetened condensed milk
- 1/4 cup fresh lime juice
- 1/4 cup granulated sugar
- Fresh blackberries
- Mint leaves
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- For the crust, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press this mixture into the bottom of the prepared pan.
- For the filling, beat the cream cheese and 1 cup sugar until smooth. Add sour cream, lime juice, lime zest, and eggs, mixing until combined. Pour over the crust and bake for 60-70 minutes until set. Allow to cool to room temperature.
- To make the mousse, combine gelatin and cold water; heat gently until dissolved. Whip heavy cream until soft peaks form, then fold in condensed milk and dissolved gelatin. Spread mousse mixture over the cooled cheesecake.
- For the glaze, heat lime juice and sugar until sugar dissolves. Allow to cool slightly, then drizzle over the mousse.
- Refrigerate the cheesecake for at least 4 hours. Before serving, garnish with fresh blackberries and mint leaves.
Notes
Use freshly squeezed lime juice for the best flavor. Store leftovers in the refrigerator for up to 3 days, covered.
