Irresistible cookies combining the richness of cheesecake with the deliciousness of Reese’s peanut butter cups.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mini Reese’s peanut butter cups, chopped
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup Reese’s peanut butter chips
- 1/2 cup semisweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients and fold in the chopped Reese’s peanut butter cups.
- In a separate bowl, mix the softened cream cheese and powdered sugar until creamy.
- Roll a tablespoon of cookie dough into a ball, flatten it slightly, add a teaspoon of the cream cheese filling, and top with another tablespoon of dough. Seal the edges.
- Place the filled cookie dough balls on the baking sheet and bake for 10-12 minutes, or until the edges are golden.
- While the cookies cool, melt the peanut butter chips and chocolate chips in separate bowls.
- Drizzle the melted chips over the cooled cookies for a final touch!

Store cookies in an airtight container for up to a week or freeze for up to 3 months.
