Description

Ingredients

  • 1 1/2 cups chocolate wafer cookies, crushed
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup smooth peanut butter
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup heavy cream
  • 810 Reese’s Peanut Butter Cups, chopped
  • Whipped cream (optional)
  • Drizzle of peanut butter and chocolate sauce (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine the crushed chocolate wafer cookies, granulated sugar, and melted butter. Stir until well mixed.
  3. Press the mixture into the bottom of a 9-inch springform pan to form a firm, even crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese and peanut butter until smooth and creamy.
  5. Add sugar and vanilla extract, mixing until combined.
  6. Beat in eggs one at a time, scraping the bowl after each addition.
  7. Stir in heavy cream and mix until smooth.
  8. Pour the cheesecake batter over the cooled crust, spreading it evenly.
  9. Gently fold in chopped Reese’s Peanut Butter Cups into the batter, reserving some for topping.
  10. Bake for 55-60 minutes, or until the center is set and only slightly wobbly. Turn off the oven and let cheesecake cool in the oven with the door cracked for 1 hour.
  11. After an hour, remove the cheesecake from the oven and cool completely at room temperature. Then refrigerate for at least 4 hours or overnight to fully set.
  12. Once chilled, top with whipped cream (optional), more chopped Reese’s Peanut Butter Cups, and a drizzle of peanut butter and chocolate sauce.

Notes

Chill overnight for the best flavor and texture. Use mini Reese’s for a fun presentation.
