- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 2 large eggs
- 1 cup buttermilk
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup vegetable oil
- 2 tbsp red food coloring
- 3 1/2 cups powdered sugar
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- Pinch of salt
- Fresh cranberries (for decoration)
- Rosemary sprigs (for decoration)
- Powdered sugar (for dusting)
- Red food coloring (for additional frosting, optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a bundt pan.
- In a medium bowl, sift together flour, cocoa powder, baking soda, and a pinch of salt.
- In a large bowl, beat sugar and oil together, then add eggs one at a time. Mix in buttermilk, vanilla extract, vinegar, and red food coloring.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Pour the batter into the prepared bundt pan and bake for 45-50 minutes or until a toothpick comes out clean.
- Let the cake cool for 10-15 minutes before inverting it onto a wire rack.
- For the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar. Mix in vanilla and a pinch of salt.
- Use a piping bag to decorate the cooled cake with frosting, add fresh cranberries and rosemary, and dust with powdered sugar.
- Serve and enjoy.

Store any uneaten cake in an airtight container in the refrigerator. It will stay fresh for up to 5 days.
