A delightful dessert that combines the rich flavor of red velvet cake with creamy cheesecake and sweet strawberries.


Ingredients

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp red food coloring
  • 1/2 tsp baking soda
  • 1/2 tsp vinegar
  • 16 oz cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 1/2 cups strawberries, sliced
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a springform pan.
  2. Make the red velvet batter by creaming the butter and sugar in a bowl. Then, add the eggs, vanilla, and red food coloring. Mix well.
  3. Gradually add the dry ingredients and buttermilk, alternating between the two. Finally, stir in the vinegar and baking soda.
  4. Pour the batter into the prepared pan and smooth it out evenly.
  5. For the cheesecake layer, beat the cream cheese, sugar, eggs, vanilla, and sour cream in a separate bowl until smooth. Carefully pour this mixture over the red velvet batter.
  6. Bake everything in the oven for about 50-55 minutes or until the cheesecake is set. Allow it to cool completely after baking.
  7. For the strawberry topping, simmer the sliced strawberries with sugar and lemon juice until they are soft. If you want a thicker topping, add cornstarch and mix well. Allow this to cool.
  8. Spread the strawberry topping over the cheesecake just before serving.

Notes

Serve chilled and garnish with extra strawberry slices or whipped cream.
