- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1/2 cup buttermilk
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- 1 tsp red food coloring

- 1/2 tsp vinegar
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 1/2 cups strawberries, sliced
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch (optional)
Instructions
- Preheat your oven to 325°F (163°C) and grease a springform pan.
- Make the red velvet batter by creaming the butter and sugar in a bowl. Then, add the eggs, vanilla, and red food coloring. Mix well.
- Gradually add the dry ingredients and buttermilk, alternating between the two. Finally, stir in the vinegar and baking soda.
- Pour the batter into the prepared pan and smooth it out evenly.
- For the cheesecake layer, beat the cream cheese, sugar, eggs, vanilla, and sour cream in a separate bowl until smooth. Carefully pour this mixture over the red velvet batter.
- Bake everything in the oven for about 50-55 minutes or until the cheesecake is set. Allow it to cool completely after baking.
- For the strawberry topping, simmer the sliced strawberries with sugar and lemon juice until they are soft. If you want a thicker topping, add cornstarch and mix well. Allow this to cool.
- Spread the strawberry topping over the cheesecake just before serving.
Notes
Serve chilled and garnish with extra strawberry slices or whipped cream.
