Description

A delightful blend of rich red velvet cake and smooth cheesecake topped with fresh strawberries, perfect for any celebration.


Ingredients

  • 1 1/2 cups sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • Fresh strawberries
  • Strawberry preserves
  • Whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, combine the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar. Mix wet ingredients into dry ingredients until well combined.
  4. Divide batter evenly between the springform pan and another 9-inch round cake pan. Bake both for 25-30 minutes, or until a toothpick comes out clean. Let cool completely.
  5. In a mixing bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Pour cheesecake batter over the cooled red velvet layer.
  6. Bake cheesecake for 50-60 minutes, or until set and edges are golden. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  7. Remove cheesecake from springform pan. Top with fresh strawberries and strawberry preserves. Optionally, pipe whipped cream around the edges.
  8. Serve and enjoy!

Notes

Use a knife dipped in hot water for easy slicing. Store leftovers covered in the fridge for up to 5 days.
