A delightful dessert combining red velvet cake and creamy cheesecake, topped with fresh strawberries and a sweet glaze.


Ingredients

  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Fresh strawberries
  • Strawberry preserves

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, combine flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, mix vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar.
  4. Add the wet ingredients to the dry ingredients and mix until smooth.
  5. Divide the red velvet batter: pour half into the springform pan and the other half into a separate 9-inch round cake pan.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.
  7. For the cheesecake layer, beat cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  8. Pour the cheesecake batter over the red velvet layer in the springform pan.
  9. Bake for 50-60 minutes, until the cheesecake is set. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  10. To assemble, remove the cheesecake from the springform pan. Top with fresh strawberries and drizzle with strawberry preserves before serving.

Notes

Make sure all ingredients are at room temperature. Use quality cream cheese for the best results.
