Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1 cup fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch springform pan.
  2. Sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. In another bowl, mix the vegetable oil, buttermilk, egg, red food coloring, vanilla extract, and white vinegar.
  4. Combine both mixtures and pour into the prepared pan. Bake for 25-30 minutes. Let the cake cool completely.
  5. Lower the oven temperature to 325°F (160°C). Beat the softened cream cheese in a bowl until smooth.
  6. Add the sugar, sour cream, heavy cream, eggs, vanilla extract, and pureed strawberries. Mix until well combined.
  7. Spoon this mixture over the cooled red velvet cake layer in the springform pan.
  8. Bake the cheesecake for 60-70 minutes. Turn off the oven, crack the door, and let it cool inside for 1 hour.
  9. Remove it from the oven and chill in the refrigerator for at least 4 hours.
  10. Toss the sliced strawberries with sugar and lemon juice in a small bowl.
  11. Carefully remove the cheesecake from the pan and top it with the sugary sliced strawberries, slice, and serve!
