A delightful dessert that combines rich red velvet cake with creamy cheesecake and fresh strawberries, perfect for any celebration.
Ingredients

- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp red food coloring
- 1/2 cup (120ml) buttermilk
- 1 cup (125g) all-purpose flour
- 1 tbsp cocoa powder (unsweetened)
- 1/2 tsp baking soda
- 1/2 tsp white vinegar
- Pinch of salt
- 2 (8 oz / 226g each) packages cream cheese, softened
- 1/2 cup (100g) granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup (120g) sour cream
- 1/2 cup (125g) pureed fresh strawberries (or thawed frozen strawberries)
- Optional: 1 tbsp flour or cornstarch
- 1 cup (240ml) heavy cream
- 2 tbsp powdered sugar
- 1/4 cup strawberry puree or 2 tbsp strawberry jam
- Optional: Cream cheese frosting
Instructions
- Preheat the oven to 350°F (175°C). Grease and line the bottom of a 9-inch springform pan.
- In a bowl, mix sugar, oil, egg, vanilla extract, and red food coloring until smooth and well combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Stir the vinegar into the buttermilk.
- Add the flour and buttermilk mixtures to the wet ingredients in batches, mixing until just combined.
- Pour the batter into the prepared pan and bake for 18–20 minutes, or until a toothpick comes out clean.
- Allow the cake to cool completely in the pan.
- Lower the oven temperature to 325°F (163°C).
- In a large bowl, beat the cream cheese and sugar until smooth and creamy.
- Add in vanilla extract, eggs, sour cream, and pureed strawberries, mixing until well combined.
- Pour the cheesecake mixture over the cooled red velvet cake.
- Bake for another 50–60 minutes or until set.
- Allow to cool, then chill in the fridge for at least 4 hours before serving.
Notes
Serve chilled with fresh strawberries or whipped cream. Can be stored in the refrigerator for up to 5 days or frozen for up to 2 months.
