- 2 tbsp red food coloring

- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh strawberries, pureed
- 1 cup fresh strawberries, sliced
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch springform pan.
- For the Red Velvet Cake Layer: Sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. In another bowl, mix the vegetable oil, buttermilk, egg, red food coloring, vanilla extract, and white vinegar. Combine both mixtures and pour into the prepared pan. Bake for 25-30 minutes. Let the cake cool completely.
- For the Strawberry Cheesecake Layer: Lower the oven temperature to 325°F (160°C). Beat the softened cream cheese in a bowl until smooth. Add the sugar, sour cream, heavy cream, eggs, vanilla extract, and pureed strawberries. Mix until well combined. Spoon this mixture over the cooled red velvet cake layer in the springform pan.
- Bake the cheesecake in the oven for 60-70 minutes. After this, turn off the oven, crack the door, and let it cool inside for 1 hour. Remove it from the oven and chill in the refrigerator for at least 4 hours.
- For the Topping: Toss the sliced strawberries with sugar and lemon juice in a small bowl.
- Assemble: Carefully remove the cheesecake from the pan. Top it with the sugary sliced strawberries, slice, and serve!
Notes
Ensure cream cheese is softened to room temperature for easy mixing. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
