Instructions
- Make the Cream Cheese Filling: Mix cream cheese, egg yolk, powdered sugar, and vanilla until smooth. Spoon dollops onto a plate and freeze.
- Make the Crumb Topping: Combine cake flour, sugar, butter, and salt until flour is coated.
- Preheat the Oven: Set oven to 425°F. Grease a muffin pan and line it with paper liners.
- Prepare the Muffin Batter: Beat together butter, oil, and brown sugar until creamy. Add egg whites, vanilla, and red velvet emulsion.
- Mix Dry Ingredients: In another bowl, combine dry ingredients. Gradually add the dry mix and buttermilk to the wet mixture.
- Fold in Heavy Cream: Beat heavy cream and gently fold it into the batter.
- Fill Muffin Cups: Fill muffin cups halfway, add frozen cream cheese filling, top with more batter and crumb topping.
- Bake: Bake at 425°F for 6 minutes, then reduce temperature to 350°F and continue baking for 18-22 minutes. Check doneness with a toothpick.
- Cool Muffins: Let muffins cool before removing from the pan.
