Description

Ingredients

  • 75 g soft butter
  • 150 g sugar
  • 1 pinch vanilla extract
  • 2 egg whites (size L)
  • 120 ml buttermilk
  • 180 g flour
  • 3 tsp baking powder
  • 1 tsp cocoa powder
  • 1 pinch salt
  • Red food coloring (preferably gel or powder)
  • 200 g white chocolate
  • 300 g cream cheese (room temperature)
  • 75 g soft butter

Instructions

  1. Beat the butter with sugar and vanilla extract until creamy. Stir in egg whites and buttermilk.
  2. Mix flour with baking powder, cocoa powder, and salt, then add to the mixture. Stir in red food coloring if desired.
  3. Preheat oven to 180°C (160°C for fan oven). Line muffin tray with cases, divide dough, and bake for approx. 25 minutes. Cool completely.
  4. Chop and melt white chocolate in a water bath, cool slightly. Beat butter until creamy, add cream cheese, then mix in cooled chocolate.
  5. Pipe frosting onto cooled cupcakes and decorate as desired.

Notes

Ensure all ingredients are at room temperature for best results. Do not overmix the batter.
