- 75 g soft butter
- 150 g sugar
- 1 pinch vanilla extract
- 2 egg whites (size L)
- 120 ml buttermilk
- 180 g flour
- 3 tsp baking powder
- 1 tsp cocoa powder
- 1 pinch salt
- Red food coloring (preferably gel or powder)
- 200 g white chocolate
- 300 g cream cheese (room temperature)
- 75 g soft butter
Instructions
- Beat the butter with sugar and vanilla extract until creamy. Stir in egg whites and buttermilk.
- Mix flour with baking powder, cocoa powder, and salt, then add to the mixture. Stir in red food coloring if desired.
- Preheat oven to 180°C (160°C for fan oven). Line muffin tray with cases, divide dough, and bake for approx. 25 minutes. Cool completely.
- Chop and melt white chocolate in a water bath, cool slightly. Beat butter until creamy, add cream cheese, then mix in cooled chocolate.
- Pipe frosting onto cooled cupcakes and decorate as desired.
Notes
Ensure all ingredients are at room temperature for best results. Do not overmix the batter.
