Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray.
- In a large bowl, whisk together 1 1/4 cups flour, 1/2 cup sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
- In a separate bowl, whisk together the buttermilk, cocoa powder, red food coloring, vegetable oil, and egg until smooth.
- Gradually stir the wet ingredients into the dry ingredients until just combined.
- In a small bowl, beat the cream cheese and the remaining 1/4 cup sugar until smooth. Gently fold the cream cheese mixture into the muffin batter, creating a marbled effect.
- Fill the prepared muffin cups about two-thirds full with the batter.
- In a small bowl, mix together 1/2 cup sugar and 1/2 cup flour. Add the butter and cut it into the mixture until coarse crumbs form.
- Sprinkle the crumb topping evenly over each muffin.
- Bake for 17-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
