  • 2 tablespoons unsalted butter, cut into cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray.
  2. In a large bowl, whisk together 1 1/4 cups flour, 1/2 cup sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
  3. In a separate bowl, whisk together the buttermilk, cocoa powder, red food coloring, vegetable oil, and egg until smooth.
  4. Gradually stir the wet ingredients into the dry ingredients until just combined.
  5. In a small bowl, beat the cream cheese and the remaining 1/4 cup sugar until smooth. Gently fold the cream cheese mixture into the muffin batter, creating a marbled effect.
  6. Fill the prepared muffin cups about two-thirds full with the batter.
  7. In a small bowl, mix together 1/2 cup sugar and 1/2 cup flour. Add the butter and cut it into the mixture until coarse crumbs form.
  8. Sprinkle the crumb topping evenly over each muffin.
  9. Bake for 17-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
