  • 2 large eggs
  • 1/2 cup sour cream
  • 2 tsp red food coloring
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar, packed
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup mini chocolate chips
  • Whipped cream (optional)
  • Mini chocolate chips or cookie crumbles for garnish

Instructions

  1. Preheat your oven to 325°F (163°C). In a medium bowl, mix the crushed chocolate sandwich cookies with melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 8-10 minutes, then remove from the oven and let cool.
  2. In a large bowl, beat the softened cream cheese, granulated sugar, and brown sugar until smooth and creamy. Add the vanilla extract, eggs, and sour cream, and beat until fully combined. Mix in the red food coloring and cocoa powder until smooth. Pour this cheesecake mixture over the cooled crust in the springform pan.
  3. Bake the cheesecake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let cool in the oven with the door slightly open for 1 hour. After 1 hour, remove it from the oven and let cool completely at room temperature. Refrigerate for at least 4 hours, or overnight, to set.
  4. In a bowl, beat the softened butter, granulated sugar, and brown sugar until smooth. Mix in the milk and vanilla extract. Add the flour and stir until a dough forms. Gently fold in the mini chocolate chips.
