- 1 1/4 cups all-purpose flour
- 1/4 cup cocoa powder
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- Red food coloring (gel or liquid, as needed)
- 1/2 cup mini chocolate chips
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups heavy cream, whipped to stiff peaks
- 1 1/2 cups chocolate sandwich cookies, crushed
- 4 tablespoons unsalted butter, melted
Instructions
- Prepare the Crust: Mix the crushed chocolate sandwich cookies with melted butter until well combined. Press into the bottom of a 9-inch springform pan and refrigerate.
- Make the Red Velvet Cookie Dough: Mix flour and cocoa powder in a small bowl. Beat softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy. Add milk, vanilla extract, and red food coloring. Gradually add flour-cocoa mixture and fold in mini chocolate chips.
- Make the Cheesecake Filling: Beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in whipped cream.
- Assemble the Cheesecake: Take half of the red velvet cookie dough and flatten pieces over the crust. Pour cheesecake filling on top and crumble the remaining cookie dough over it.
- Chill the Cheesecake: Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
- Serve: Remove from the springform pan and slice to serve.
Notes
Serve chilled with whipped cream or chocolate sauce. Store leftovers tightly covered in the fridge for 3 to 5 days.
