Ingredients

Scale
  • 3/4 cup warm milk (about 110°F/43°C)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon red food coloring
  • 2 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/3 cup unsalted butter, softened (for filling)
  • 1/2 cup brown sugar (for filling)
  • 1 tablespoon ground cinnamon (for filling)
  • 4 oz cream cheese, softened (for icing)
  • 2 tablespoons unsalted butter, softened (for icing)
  • 1 cup powdered sugar (for icing)
  • 1 teaspoon vanilla extract (for icing)
  • 23 tablespoons milk (adjust for icing consistency)

Instructions

  1. In a large bowl, combine warm milk and yeast. Let sit for 5-10 minutes until foamy.
  2. Add sugar, egg, melted butter, and red food coloring; mix until combined.
  3. In another bowl, whisk flour, cocoa powder, and salt; gradually add to wet mixture until soft dough forms.
  4. Knead on a floured surface for 5-7 minutes until smooth, or use a stand mixer for 5 minutes.
  5. Place the dough in an oiled bowl, cover it, and let it rise for 1-1.5 hours until doubled in size.
  6. For the filling, mix softened butter, brown sugar, and cinnamon in a bowl.
  7. Roll out the dough into a rectangle (14×9 inches), spread filling evenly, and roll tightly from the long edge. Cut into 9-12 pieces.
  8. Place rolls in a greased pan, cover, and let rise for 30-45 minutes until puffed.
  9. Preheat oven to 350°F (175°C) and bake rolls for 20-25 minutes until golden.
  10. For the cream cheese icing, beat together cream cheese and butter until smooth, then add powdered sugar, vanilla, and milk to desired consistency.
  11. Spread icing over warm rolls and serve immediately.
