Description

Delightful red velvet cookies with rich cocoa and sweet white chocolate chips, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 1/2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1/3 cup brown sugar, lightly packed
  • 1/2 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 23 teaspoons red food coloring
  • 3/4 cup white chocolate chips

Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, and salt. Set aside.
  2. In another large bowl, beat the softened butter, brown sugar, and white sugar until fluffy.
  3. Add the egg, vanilla extract, and red food coloring, mixing until combined.
  4. Gradually add the flour mixture while the mixer runs on low speed until just combined.
  5. Turn off the mixer and gently stir in the white chocolate chips.
  6. Cover the bowl with plastic wrap and refrigerate for 3 hours or overnight.
  7. Preheat the oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  8. Use a cookie scoop to form dough balls, spacing them 2 inches apart on the lined sheets.
  9. Bake one sheet at a time for 7-9 minutes, or until just set on top.
  10. Optionally, add extra white chocolate chips on top of the cookies when they come out of the oven.
  11. Let the cookies cool on the tray for 10 minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with milk or tea. Store in an airtight container at room temperature for up to a week.
