Instructions
- Preheat your oven to 325°F (163°C). Grease and flour two 9-inch round cake pans and set aside.
- In a large bowl, whisk together the flour, 1 1/2 cups sugar, baking powder, baking soda, salt, and cocoa powder.
- In a separate bowl, whisk together the vegetable oil, buttermilk, 2 eggs, red food coloring, vanilla extract, and vinegar until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
- In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add the remaining 1/2 cup sugar, 2 eggs, and vanilla extract, beating until fully combined and smooth.
- Pour half to two-thirds of the red velvet cake batter into one of the prepared pans. Carefully pour the cheesecake filling over the red velvet layer, spreading it evenly.
- Pour the remaining red velvet cake batter over the cheesecake layer, smoothing the top with a spatula.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely. Refrigerate for at least 2 hours before serving.
Notes
Make sure your ingredients are at room temperature for the best results. Avoid overmixing the batter for a light and fluffy cake. Let the cheesecake cool completely before refrigerating it for better texture.
