Ingredients
Scale
- Two 8-ounce packages cream cheese, at room temperature
- 2/3 cup granulated sugar
- Pinch of salt
- 2 large eggs
- 1/3 cup sour cream
- 1/3 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 1/2 cups vegetable or canola oil
- 1 cup buttermilk
- 1/4 cup red food coloring
- 2 teaspoons vanilla extract
- 2 teaspoons white vinegar
- 2 1/2 cups powdered sugar, sifted
- 1/2 cup unsalted butter, at room temperature
- 1 tablespoon vanilla extract
Instructions
- Prepare the Cheesecake Layer: Preheat your oven to 325°F (165°C). Line a 9-inch springform pan with parchment paper and wrap it with foil. In a mixing bowl, beat the cream cheese until smooth. Slowly add the sugar and salt, mixing well. Then, add the eggs one at a time, mixing well after each addition. Add the sour cream, whipping cream, and vanilla, and mix until combined. Pour the mixture into the prepared pan and bake for 45 minutes. Allow it to cool for 1 hour, then freeze until firm.
- Prepare the Cake Layers: Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. In a large bowl, mix the flour, sugar, cocoa powder, baking soda, and salt. Add the eggs, oil, buttermilk, red food coloring, vanilla, and vinegar, and mix until everything is well combined. Divide the batter evenly between the prepared pans and bake for 30-35 minutes. Allow the cakes to cool in the pans for a bit, then transfer them to a wire rack to cool completely.
- Prepare the Frosting: In a mixing bowl, beat together the powdered sugar, cream cheese, butter, and vanilla until smooth and creamy.
- Assemble the Cake: Place one cake layer on a serving plate. Add the cheesecake layer on top and then place the second cake layer over it.
- Frost the Cake: First, apply a crumb coat of frosting all over the cake. Chill it in the refrigerator for 30 minutes. After that, apply a final layer of frosting and decorate as you like.
