Delicious Red Velvet Cheesecake Brownies that combine rich red velvet chocolate and creamy cheesecake.

- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon red food coloring
- 1/4 cup unsweetened cocoa powder
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar (for cheesecake layer)
- 1 large egg (for cheesecake layer)
- 1 teaspoon vanilla extract (for cheesecake layer)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk together the melted butter, 1 cup of sugar, 2 eggs, 2 teaspoons of vanilla extract, and red food coloring until smooth.
- Sift in the cocoa powder, flour, and salt. Gently fold the dry ingredients into the wet ingredients until just combined.
- Pour about 3/4 of the red velvet batter into the prepared baking pan, spreading it evenly.
- In another bowl, beat the cream cheese and 1/3 cup of sugar together until smooth and creamy.
- Add 1 egg and 1 teaspoon of vanilla extract to the cream cheese mixture, and beat until fully incorporated.
- Spoon the cheesecake mixture over the red velvet layer in the pan, spreading it gently.
- Drop dollops of the remaining red velvet batter on top of the cheesecake layer. Use a knife or skewer to swirl the layers together gently, creating a marbled effect.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownies to cool in the pan before transferring them to a cutting board. Slice into squares and enjoy!
