A delightful dessert that combines red velvet cake and creamy cheesecake in bite-sized treats, perfect for any occasion.


Ingredients

  • 1/2 cup buttermilk
  • 1 teaspoon red food coloring
  • 1 1/4 cups all-purpose flour
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 1 cup white chocolate or candy melts (optional, for coating)
  • Red velvet crumbs (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and line a baking pan.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until fluffy. Add the egg and vanilla, then mix in the red food coloring.
  4. Alternate adding the dry ingredients and buttermilk to the butter mixture until well combined.
  5. Pour the batter into the prepared pan and bake for 20-25 minutes or until a toothpick comes out clean. Allow the cake to cool completely.
  6. While the cake is cooling, beat together the cream cheese, powdered sugar, and 1/2 teaspoon vanilla extract until smooth. Chill the mixture for 15 minutes.
  7. Crumble the cooled cake and mix it with some cheesecake filling to form a dough. Scoop some dough and wrap it around a ball of cheesecake filling to create bites.
  8. Roll the cake bites in the reserved cake crumbs or dip them in melted white chocolate.
  9. Chill the bites for at least 30 minutes before serving.

Notes

Make sure your butter and cream cheese are at room temperature to ease mixing. Use an ice cream scoop for even-sized bites.
