A delightful dessert combining classic red velvet flavors and creamy berry mousse, perfect for special occasions.


Ingredients

  • 1 tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1/2 cup buttermilk
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • red food coloring
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tsp gelatin powder
  • 3 tbsp water
  • 1 cup mixed berries (fresh or frozen)
  • 1/3 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a 9-inch springform pan with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the sugar, vegetable oil, egg, buttermilk, vinegar, vanilla, and red food coloring.
  4. Combine the wet and dry ingredients, mixing until smooth. Pour the batter into the prepared pan and bake for 18–20 minutes. Let it cool completely.
  5. To make the mousse, sprinkle gelatin over water and let it sit for 5 minutes. Then heat gently until dissolved.
  6. In a separate bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form. Gently fold in the cooled gelatin.
  7. Pour this mixture over the red velvet base and smooth the top. Chill for 4 hours or until set.
  8. For the glaze, cook the mixed berries, sugar, and lemon juice in a saucepan until soft. Blend and strain the mixture.
  9. Return it to the pan, add the cornstarch mixture, and cook until thickened. Let it cool, then pour over the mousse and chill until firm.
  10. Before serving, decorate the cake with whipped cream, chocolate shavings, and fresh berries.

Notes

Serve chilled and consider adding extra whipped cream or fresh berries for presentation.
