A delightful dessert combining classic red velvet flavors and creamy berry mousse, perfect for special occasions.

- 1 cup all-purpose flour
- 1 tbsp cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 1 egg
- 1/2 cup buttermilk
- 1 tsp white vinegar
- 1 tsp vanilla extract
- red food coloring
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 tsp gelatin powder
- 3 tbsp water
- 1 cup mixed berries (fresh or frozen)
- 1/3 cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch mixed with 2 tbsp water

Instructions
- Preheat the oven to 350°F (175°C). Prepare a 9-inch springform pan with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, mix the sugar, vegetable oil, egg, buttermilk, vinegar, vanilla, and red food coloring.
- Combine the wet and dry ingredients, mixing until smooth. Pour the batter into the prepared pan and bake for 18–20 minutes. Let it cool completely.
- To make the mousse, sprinkle gelatin over water and let it sit for 5 minutes. Then heat gently until dissolved.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form. Gently fold in the cooled gelatin.
- Pour this mixture over the red velvet base and smooth the top. Chill for 4 hours or until set.
- For the glaze, cook the mixed berries, sugar, and lemon juice in a saucepan until soft. Blend and strain the mixture.
- Return it to the pan, add the cornstarch mixture, and cook until thickened. Let it cool, then pour over the mousse and chill until firm.
- Before serving, decorate the cake with whipped cream, chocolate shavings, and fresh berries.
Notes
Serve chilled and consider adding extra whipped cream or fresh berries for presentation.
