Ingredients

  • 1 tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1/2 cup buttermilk
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • Red food coloring
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tsp gelatin powder
  • 3 tbsp water
  • 1 cup mixed berries (fresh or frozen)
  • 1/3 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • Chocolate shavings
  • Whipped cream
  • Chocolate triangle
  • Fresh berries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan by lining it with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the sugar, vegetable oil, egg, buttermilk, vinegar, vanilla extract, and red food coloring until combined.
  4. Combine the wet and dry ingredients and mix until smooth.
  5. Pour the batter into the prepared pan and bake for about 18–20 minutes. Allow it to cool completely.
  6. To make the mousse, sprinkle gelatin over the water and let it sit for 5 minutes. Heat it gently until dissolved.
  7. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold in the cooled gelatin mixture.
  8. Pour the mousse over the cooled red velvet base and smooth the top. Chill for 4 hours or until it sets.
  9. For the glaze, cook mixed berries, sugar, and lemon juice in a saucepan until soft. Blend and strain the mixture.
  10. Return the strained mixture to the pan, add the cornstarch mixture, and cook until thickened. Allow it to cool, then pour over the mousse layer. Chill until firm.
  11. Decorate the cake with whipped cream, chocolate shavings, and fresh berries just before serving.

Notes

Make sure to cool the cake completely before adding the mousse to prevent it from melting. Whip the cream just until soft peaks form to ensure a light mousse.
