- 1 lb cheese or spinach ravioli (fresh or frozen)
- 2 tbsp olive oil
- 2 cups cherry tomatoes, halved
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
Instructions
- Cook the ravioli according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add cherry tomatoes and asparagus, cooking until the asparagus is tender, about 5-7 minutes.
- Toss in the cooked ravioli and sauté for another 2-3 minutes.
- Season with salt, pepper, and fresh herbs if desired. Serve warm.
Notes
Serve with grated Parmesan cheese and a side salad or crusty bread. Store leftovers in an airtight container in the refrigerator for 2-3 days.
