Ingredients

  • 1 (9-ounce) package fresh cheese ravioli
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • Salt to taste
  • Black pepper to taste
  • Grated Parmesan cheese, for garnish

Instructions

  1. Cook the ravioli according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.
  2. While the ravioli is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the cherry tomatoes and asparagus to the skillet. Cook for 4–5 minutes until the tomatoes begin to soften and the asparagus is tender-crisp.
  5. Stir in the butter and red pepper flakes (if using). Cook for 1 more minute.
  6. Add the cooked ravioli and reserved pasta water to the skillet. Toss gently to combine and coat the pasta.
  7. Remove from heat and stir in chopped basil and parsley. Season with salt and black pepper to taste.
  8. Serve immediately with a sprinkle of grated Parmesan on top.

Notes

Best served warm. Enjoy with a light salad or crusty bread and a glass of white wine.
