- 1 (9-ounce) package fresh cheese ravioli
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 1 tablespoon unsalted butter
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- Salt to taste
- Black pepper to taste
- Grated Parmesan cheese, for garnish
Instructions
- Cook the ravioli according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.
- While the ravioli is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add the cherry tomatoes and asparagus to the skillet. Cook for 4–5 minutes until the tomatoes begin to soften and the asparagus is tender-crisp.
- Stir in the butter and red pepper flakes (if using). Cook for 1 more minute.
- Add the cooked ravioli and reserved pasta water to the skillet. Toss gently to combine and coat the pasta.
- Remove from heat and stir in chopped basil and parsley. Season with salt and black pepper to taste.
- Serve immediately with a sprinkle of grated Parmesan on top.
Notes
Best served warm. Enjoy with a light salad or crusty bread and a glass of white wine.
