Delightful dessert tartlets with a perfect blend of tart raspberry and sweet white chocolate, ideal for impressing guests.
Ingredients

- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, chilled and diced
- 1 large egg yolk
- 2 tablespoons ice water
- 1/2 cup raspberry jam
- 2 cups white chocolate, chopped
- 1 cup heavy cream
- 1/2 cup shelled pistachios, roughly chopped
- Fresh raspberries for garnish
Instructions
- Combine flour and sugar in a food processor. Add diced butter and pulse until coarse crumbs form. Mix egg yolk and ice water, drizzle over the flour mixture, and pulse until dough forms. Press the dough into tartlet pans, prick the bottoms, and chill for 30 minutes.
- Preheat your oven to 375°F (190°C). Bake the shells for 12-15 minutes until golden brown. Let them cool completely.
- Spread raspberry jam in the cooled tart shells. Melt the white chocolate in a double boiler, then whisk in heavy cream. Pour this mixture over the jam layer in each tartlet shell and chill until set, about 120 minutes.
- Sprinkle chopped pistachios on top and add fresh raspberries before serving.
Notes
For a twist, add lemon zest to the filling or swap the raspberry jam with blueberry or strawberry.
