Description

A delightful dessert combining creamy cheesecake with sweet-tart raspberries and rich white chocolate.


Ingredients

  • 1/4 cup granulated sugar
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1/2 cup raspberry puree (strained to remove seeds)
  • 1 cup granulated sugar
  • 1 cup white chocolate chips, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • White chocolate curls (for topping)
  • Fresh raspberries (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. Bake for 10 minutes and let it cool.
  4. In a separate bowl, beat softened cream cheese until smooth. Add 1 cup granulated sugar and mix well.
  5. Incorporate sour cream and vanilla extract. Beat in eggs one at a time.
  6. Mix in melted white chocolate and raspberry puree until fully combined.
  7. Pour cheesecake batter over cooled crust and spread evenly.
  8. Bake for 60-70 minutes or until center is set and edges are lightly browned.
  9. Turn off oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  10. Refrigerate cheesecake for at least 4 hours or overnight before removing from the pan.
  11. Garnish with fresh raspberries and white chocolate curls before serving.

Notes

Make sure the cream cheese is at room temperature for a smooth batter. You can use store-bought raspberry puree for convenience.
