Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter to form the crust.
- Press this mixture into the bottom of the prepared pan and bake for 10 minutes, then let it cool.
- For the cheesecake filling, beat softened cream cheese until smooth, then mix in granulated sugar.
- Incorporate sour cream and vanilla extract, beating in eggs one at a time.
- Mix in melted white chocolate and raspberry puree until combined.
- Pour the cheesecake batter over the cooled crust, spreading it evenly.
- Bake for 60-70 minutes until the center is set.
- Turn off the oven, leaving the cheesecake inside with the door slightly ajar for an hour.
- Refrigerate for at least 4 hours or overnight before serving.
- Garnish with fresh raspberries and white chocolate curls before serving.
Notes
Use softened cream cheese for a smooth texture. Strain raspberry puree to remove seeds for a smoother filling. Avoid overmixing the batter to prevent cracks.
