- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 eggs
- 1 tablespoon red food coloring
- 1 cup raspberry jam
- 2 cups whipped cream
- 2 cups fresh raspberries
Instructions
- Preheat the oven to 350°F (175°C) and grease two cake pans.
- In a large bowl, mix together the flour, sugar, baking soda, and cocoa powder.
- In a separate bowl, combine the buttermilk, vegetable oil, eggs, and red food coloring.
- Pour the wet mixture into the dry ingredients and mix until well combined.
- Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool completely, then spread raspberry jam between the layers.
- Frost the top and sides of the cake with whipped cream and decorate with fresh raspberries.
- Refrigerate the cake for 1 hour before serving.
