Ingredients

  • 24 oz fresh or frozen raspberries
  • 2 cups granulated sugar
  • 1 tbsp lemon juice
  • 2 1/2 tsp unflavored powdered gelatin
  • 1/4 cup water
  • 3/4 cup mascarpone cheese, chilled
  • 1/2 cup confectioners’ sugar
  • 1 cup heavy cream, chilled

Instructions

  1. Make the Raspberry Jam: In a saucepan, combine raspberries, granulated sugar, and lemon juice. Cook over medium heat, breaking up the raspberries until thickened. Strain to remove seeds and chill.
  2. Prepare the Mousse: Chill a mixing bowl and whisk. Sprinkle gelatin over water, let it bloom, then dissolve it in the microwave. Whip the heavy cream until soft peaks form, then gradually add the gelatin. In another bowl, mix mascarpone and confectioners’ sugar until smooth. Fold the whipped cream into the mascarpone mixture, then add the raspberry jam.
  3. Chill and Serve: Refrigerate for 4 to 6 hours. Serve as a dessert or in parfait glasses.

Notes

Use fresh raspberries when in season for the best flavor. Ensure your mixing bowl and equipment are chilled to help the mousse set properly. For a sweeter mousse, adjust the sugar to taste.
