- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for dusting
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup finely chopped almonds
- 1/2 cup raspberry jam (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and powdered sugar until light and fluffy.
- Mix in vanilla and almond extract until well combined.
- Gradually add flour and salt, stirring in chopped almonds until fully mixed.
- Scoop out the dough and flatten it in your palm. Place 1/2 teaspoon of raspberry jam in the center and fold the dough around it to form a ball.
- Place the dough balls on the baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes or until the edges are golden.
- Dust with powdered sugar while still warm. Let cool on a wire rack.
Notes
Make sure your butter is softened for easier mixing. Don’t overbake for a perfect texture.
