Ingredients

  • 1 1/2 cups Oreo cookie crumbs
  • 1/4 cup melted butter
  • 2 cups cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup melted dark chocolate
  • 1/2 cup sour cream
  • 1/4 cup unsweetened cocoa powder
  • 3/4 cup fresh or frozen raspberries
  • 1 cup fresh or frozen raspberries (for sauce)
  • 2 tbsp granulated sugar (for sauce)
  • 1 tsp lemon juice (for sauce)
  • Whipped cream (optional)
  • Fresh raspberries (optional)
  • Chocolate shavings (optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, combine the Oreo crumbs and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and let it cool.
  3. In another bowl, beat the cream cheese and granulated sugar together until smooth.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla extract, melted chocolate, sour cream, cocoa powder, and raspberries until fully combined.
  6. Pour the filling into the cooled crust.
  7. Bake for 50-60 minutes, or until the cheesecake is set. Let it cool before refrigerating.
  8. For the raspberry sauce, combine 1 cup of raspberries, 2 tablespoons of sugar, and lemon juice in a saucepan over medium heat. Bring to a boil, then simmer for a few minutes. Let it cool.
  9. Serve the cheesecake topped with raspberry sauce, whipped cream, fresh raspberries, and chocolate shavings if desired.

Notes

Make sure your cream cheese is softened to room temperature for a smooth filling. Use high-quality dark chocolate for richer flavor.
