- 1 1/2 cups Oreo cookie crumbs
- 1/4 cup melted butter
- 2 cups cream cheese (softened)
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup melted dark chocolate
- 1/2 cup sour cream
- 1/4 cup unsweetened cocoa powder
- 3/4 cup fresh or frozen raspberries
- 1 cup fresh or frozen raspberries (for sauce)
- 2 tbsp granulated sugar (for sauce)
- 1 tsp lemon juice (for sauce)
- Whipped cream (optional)
- Fresh raspberries (optional)
- Chocolate shavings (optional)
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, combine the Oreo crumbs and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and let it cool.
- In another bowl, beat the cream cheese and granulated sugar together until smooth.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract, melted chocolate, sour cream, cocoa powder, and raspberries until fully combined.
- Pour the filling into the cooled crust.
- Bake for 50-60 minutes, or until the cheesecake is set. Let it cool before refrigerating.
- For the raspberry sauce, combine 1 cup of raspberries, 2 tablespoons of sugar, and lemon juice in a saucepan over medium heat. Bring to a boil, then simmer for a few minutes. Let it cool.
- Serve the cheesecake topped with raspberry sauce, whipped cream, fresh raspberries, and chocolate shavings if desired.
Notes
Make sure your cream cheese is softened to room temperature for a smooth filling. Use high-quality dark chocolate for richer flavor.
