Description

A delightful dessert that combines a moist crumb cake with a rich cheesecake filled with tart raspberries. Perfect for any occasion!


Ingredients

  • 3 1/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup cold unsalted butter, cut into cubes
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese, softened
  • 1/2 cup + 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries
  • 1/2 cup powdered sugar
  • 23 teaspoons milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment paper and spray with nonstick cooking spray.
  2. In a large bowl, mix together the flour, baking powder, salt, brown sugar, and granulated sugar.
  3. Add the cold butter and blend until coarse crumbs form.
  4. Mix in the eggs and vanilla extract. Press 2/3 of the mixture into the prepared pan.
  5. In another bowl, combine mascarpone cheese, cream cheese, vanilla extract, sugar, and cornstarch; mix until smooth.
  6. Add the eggs and mix gently.
  7. Pour half the cheesecake mixture into the crust, scatter raspberries, then top with the remaining mixture.
  8. Add more raspberries and crumbs on top.
  9. Bake for 70-80 minutes until golden and a toothpick comes out clean. Allow to cool.
  10. Whisk powdered sugar with milk to make a glaze and drizzle over the cake. Store in the refrigerator.

Notes

Use fresh raspberries for the best flavor. Allow the cake to cool completely before adding the glaze for a better presentation.
