Description

Healthy and delicious Raspberry Brownie Date Bites made with dates, walnuts, cocoa powder, and fresh raspberries.


Ingredients

Scale
  • 1 cup Medjool dates, pitted
  • 1 cup walnuts
  • 1/2 cup cocoa powder
  • 1 cup fresh raspberries
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a food processor, combine the pitted dates and walnuts. Pulse until the mixture is coarse and crumbly.
  2. Add cocoa powder, vanilla extract, salt, and half of the raspberries. Pulse again until combined.
  3. Once the mixture is sticky enough to hold together, take small amounts and roll into bite-sized balls.
  4. Place the remaining raspberries in a bowl and gently press each bite into the raspberries to coat the outside.
  5. Refrigerate for about 30 minutes to firm up before serving.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. Thaw in the refrigerator before serving.
