Description
Healthy and delicious Raspberry Brownie Date Bites made with dates, walnuts, cocoa powder, and fresh raspberries.
Ingredients

- 1 cup Medjool dates, pitted
- 1 cup walnuts
- 1/2 cup cocoa powder
- 1 cup fresh raspberries
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a food processor, combine the pitted dates and walnuts. Pulse until the mixture is coarse and crumbly.
- Add cocoa powder, vanilla extract, salt, and half of the raspberries. Pulse again until combined.
- Once the mixture is sticky enough to hold together, take small amounts and roll into bite-sized balls.
- Place the remaining raspberries in a bowl and gently press each bite into the raspberries to coat the outside.
- Refrigerate for about 30 minutes to firm up before serving.
Notes
Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. Thaw in the refrigerator before serving.
