- 2 sleeves of graham crackers, crushed
- 1 heaping tablespoon of sugar
- 1 stick (1/2 cup) of butter, melted
- 4 (8 oz) packages of cream cheese, softened
- 1 cup of heavy cream
- 1 cup of sugar
- 1 tablespoon JELL-O Lime flavor
- 1 tablespoon JELL-O Cherry flavor
- 1 tablespoon JELL-O Orange flavor
- 1 cup boiling water (divided)
Instructions
- Prepare the Crust: Crush the graham crackers in a blender until fine. Mix with sugar and melted butter, then press into a parchment-lined 7-inch springform pan. Freeze until set.
- Prepare the Cheesecake Filling: Whip the heavy cream until stiff peaks form and refrigerate. Mix softened cream cheese with sugar until smooth, then fold in whipped cream, and refrigerate.
- Prepare the JELL-O Flavors: Dissolve each JELL-O flavor in separate ramekins with boiling water and cool to room temperature.
- Color the Filling: Divide cheesecake filling into three bowls and mix in each JELL-O flavor.
- Assemble the Cheesecake: Pour Lime mixture over the crust and freeze until set. Repeat for Cherry and Orange layers, freezing each layer.
- Serve the Cheesecake: Remove from freezer, slice, and serve immediately.
Notes
Add a dollop of whipped cream or colorful sprinkles on top before serving for extra flair. Store any leftovers in the freezer, well-covered.
