- 1/3 cup + 1 tbsp egg whites
- 1/2 cup granulated sugar
- 1 cup + 1 tbsp almond flour
- 1 cup powdered sugar
- Black powder food coloring (for black shells)
- White powder food coloring (optional, for white shells)
- 1/4 cup each of candy melt colors: red, orange, yellow, green, blue, purple
- 3 oz cream cheese, softened
- 3 tbsp unsalted butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
- Powder food coloring: red, orange, yellow, green, blue, purple
Instructions
- Sift together almond flour and powdered sugar into a bowl; set aside.
- In a heatproof bowl, whisk egg whites and granulated sugar over a water bath until warm.
- Transfer to a mixer and beat until stiff peaks form, adding food coloring as needed.
- Fold sifted dry ingredients gently into the meringue until the batter flows.
- Pipe circles onto parchment-lined baking sheets and let them dry until a skin forms.
- Bake at 325°F (160°C) for 15-20 minutes and let cool.
- Melt each color of candy melts in the microwave; drizzle over the cooled macaron shells.
- Beat cream cheese and butter until creamy, then add powdered sugar and vanilla; mix until fluffy.
- Color the frosting using food coloring and create a rainbow log with the colored frosting.
- Pipe the rainbow frosting onto half of the macaron shells and sandwich with the other half.
Notes
Weigh ingredients for accuracy and let macarons sit overnight in the fridge for best flavor. Store in an airtight container in the refrigerator.
